Our Story

Hibernus is set in the verdant peace of the Umbrian countryside between the medieval cities of Orvieto and Todi. Commencing in 2005 with the restoration of a 300 year old Casale, Hibernus is rooted in the traditions of Umbrian farming, genuine bio commitment and imbued with the tranquility of this natural idyll.

With six hectares of land, the estate was built over the course of another ten years, and now boasts 450 olive trees, two hectares of vineyards: one white and one red.

We hope that, with our wines and olive oil, you can find a moment to pause a while and enjoy the pleasures naturally harvested from our Umbrian soil, not far from the ancient fortress walls of Orvieto, preferably with your feet planted firmly under a table and your arms around those you love most.

Hibernus is Latin for ‘Winter’, our family name. From Hibernus to you, we raise our glasses - salute!
